Humans were born as foragers, following the animals and species that preceded us. Our body and its mechanisms for absorbing food, were formed in millions of years. Since the advent of agriculture, its industrialization and treatments, transformations and additions, food has changed substantially. Changes that could not occur in our bodies. That it has the capacity to do it, but the times are not the same. Millions are the years that nature built us and millions of years we need to change them.

These difficulties in adapting to "new foods" have their price, which is often called a disease, which we can define as a sign of disagreement in our body, when we impose inappropriate foods on it.

The Pan American Health Office (PAHO) advises, for our countries, a diet based on of fruits and vegetables mainly, in addition to whole grains and legumes (grains that come in pods). Meat, animal protein in general, as a complement and taking into account cultural, historical factors etc.

Industrial agriculture has introduced the indiscriminate use of various chemicals. The same, added to the use of machinery, has allowed the production of food on a large scale, but at a high cost to the health of the ecosystem and therefore of man. The replacement of the farmer by the machine produced, and continues to produce, uprooting, poverty and violence, among many other evils. In addition to removing contact and relationship with the earth, from people, it removes food from the spiritual and energetic load that they give it.

Industrial agriculture takes us all away from nature, it does not allow us to feel part of it. With the consequent negative consequences for humans.

Mother nature and mother earth, the pachamama, show us a natural, biodiverse model, like all life on the planet. Gaia is a living being that includes the earth and all its atmospheric envelopes, up to the limit with the Universe. Its self-regulation in temperature, climate, humidity, oxygen content and other elements of life, were harmonized with the millions of years of existence, but in a short time, humans put it at risk. He put profit above life and the future.

Monoculture is synonymous with pests, soil deterioration, the use of agrochemicals, many of them toxic, true poisons, for all forms of life. Our natural defenses, our quality of life deteriorates and disease is its result. When we lose health, we lose freedom.

Monoculture is not sustainable, it disrespects the natural, the harmonious and mortgages the future.

The poisons that populate the environment, air, water, plants, animals, are ingested by us, or enter the blood through respiration or skin. We are the final consumers. In all cases, because they are unknown, foreign and harmful substances to the body, they do not circulate in the blood, are neither metabolized nor can they be eliminated. Then they are deposited in the tissues, mainly in the fatty tissue, of the central nervous system, brain, cerebellum, etc., because they are fat-soluble substances. For the same reason, there are no tolerable doses. Today's is added to yesterday's and tomorrow's. While we manufacture poisons, they will end up in us. And when we die, the rains will carry the poisons to the napas and they will return to the final consumers.

The damage to health is incalculable and unknown, since there are no methods for diagnosis and less to eliminate them. Varied diseases, from nervous ones, such as changes in behavior, depression, to the most serious. Of course, those who fumigate or are near the sources of poisons are the most affected.

Because in addition to growing without poisons, it is biodiverse, with little use of machinery, quite imitating nature and respecting soil, air, water and the environment in general.

It is not an energy consumer and is close to being sustainable, recycling moisture and fertility.

Vita is life and the vitamin is obtained from fresh vegetables and fruits. And better if they are neighbors, if they should not be moved, if they are consumed shortly after being harvested. So, in addition to keeping their vitality, they are familiar to us, because they are nourished by the water we drink, the ground we walk on, the air we breathe and the sun that energizes us.

For this reason, those of us who know these principles, we defend the Misiones Free Fairs. Knowing that the settlers who sell the products have received agroecological training.

Agroecology as a source of healthy foods, which preserve health and prevent diseases. Foods that also function as plants for health, that is how medicinal plants behave, helping to maintain health, to infect it.

Many wild plants serve two main goals, to feed us and heal us. For example purslane, cow's tongue, plantain, dandelion and many bitters etc. Agroecological products are similar.

The farmer, when he respects the soil, the water, the environment, respects himself and is respecting all of us. Food grown with love, with positive attitudes, transmits a positive charge to those who consume it. It feeds the body and the soul, it helps us to better relate to nature, to each other, to Creation.

We know that after weaning, mammals, including us humans, do not digest milk. Yogurt and cheese have a previous digestion and we can assimilate them. But like all animal protein, little and nothing favors us. Described there are countless diseases from consuming these foods. They give us fat, and not the good kind.

I always name the cow, as an example. She consumes only grass and produces protein, calcium, iron etc., in good quantities. Being mammals, we have a similar metabolism, we manufacture proteins, from foods that do not contain them.

The consumption of soft drinks has become massive. Little is said and published about the prejudices it produces. The Model has to work, despite our health. Or rather, despite the lack of health.

A similar thing happens with bottled water, which, in order to reach our table, needs antibiotics, or the like.

It follows the principle that speaks of the mandate that God gives us, nature, to take care of the natural heritage, in such a way that it serves for future generations. Take care of what we receive from our parents-grandparents, so that children-grandchildren etc. can use it.

Indigenous Peoples are an example of sustainability. Every time they work the soil, use the water, the plants, etc., they are thinking of seven or nine generations. It is also a form of resurrection, of giving continuity to life, which precisely has to do with its definition: Life as movement, change, transformation. It is the responsibility of agroecology, of sustainable agriculture, of making the necessary contributions, so that transformations, changes, are made in favor and not against health, life and the future.

The so-called green revolution or industrial agriculture changed many eating habits and others, influencing and unifying the cultures of the peoples. If cultivation and culture have the same linguistic root, we must understand the influence of one on the other. We lost many cultural elements, due to the imposition of the dominant countries, just as we lost traditional crops and exchanged them for those needed by the powerful countries themselves. Soybeans and pine are good examples. Agroecology has the instruments at its disposal, for the recovery of crops and the culture that belongs to us. Returning crops is a liberating element.
